It was originally used for flatbreads. H<em>ere&#8217;s my approach to turn them into pretty bread loafs instead.<\/em><\/em> &#x1f956;<\/p>\n\n\n\n<p>Buckwheat, the pseudo-cereal, has never crossed my path until my early thirties. And even though I like their taste in cooked dishes or porridge: Ever since I&#8217;ve learned how to bake using whole buckwheat groats, they pretty much always end up in the oven instead of a pot.<\/p>\n\n\n\n<p>This simple gluten-free dough concept acts as a base for my versions of <a href=\"https:\/\/ekesto.com\/vegan-recipes\/buckwheat-bread\/\">buckwheat bread<\/a> and <a href=\"https:\/\/ekesto.com\/vegan-recipes\/buckwheat-chocolate-banana-bread\/\">buckwheat chocolate banana bread<\/a>. You can get really creative with this. <a href=\"#comments\">Let me know<\/a> what delicious vegan creations you came up with!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Viva la fermentation &#x2728;<\/h2>\n\n\n\n<p>The reason the bread will end up having air pockets is pretty simple: Fermentation.<\/p>\n\n\n\n<p>Similar to working with sourdough, we will have moments during the preparation phase where we let the dough rest. This gives organisms in our air and on the groats themselves time to get cosy and multiply.<\/p>\n\n\n\n<p><em>Note: The room temperature has a huge impact on fermentation processes. My experiments have mainly be done between ~15 and 25 degrees Celsius. See how it works for your environment<\/em> <em>or <a href=\"#comments\">drop me a line<\/a> if you have questions.<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Simple schedule ideas &#x1f559;<\/h2>\n\n\n\n<p>Depending on your day structure and preferred baking time, choose when you want to start the process. I haven&#8217;t figured out why exactly. The only thing I&#8217;ve noticed is that it&#8217;s darker in colour (darker brown). The problem is that it behaves differently when soaking (soaks and expands much quicker\/more) and it doesn&#8217;t hold together well when baked. So should yours really don&#8217;t hold together, try another brand. And use that failed attempt for a stir fry or <a href=\"https:\/\/ekesto.com\/vegan-recipes\/recipe-free-vegan-cooking\/\">be creative<\/a>.<\/p>\n\n\n\n<p>Alright.
