And next time, you might be a little less generous with that ingredient. Instead of overthinking and looking at all those numbers of giant ingredients lists, I decided to <em>learn by doing!<\/em><\/p>\n\n\n\n<p>Of course, I watched countless cooking videos and put my nose into cook books when ever I had a chance. But instead of copying everything, I was mainly focused on the <em>how<\/em> instead of <em>what<\/em> they use.<\/p>\n\n\n\n<p>So, what follows are some simple strategies and insights that might help setting the &#8222;adventurous cook&#8220; within you on fire &#x1f4a5;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Start small &#8211; but get started!<\/h2>\n\n\n\n<p>To reduce possible stress factors in the kitchen, a suggestion could be to only cook for yourself. At first. Or maybe for your partner, family or community. But have you ever added them to a stew or stir-fry? Or blended them into a soup or sauce?<\/p>\n\n\n\n<p>When roasting veggies or fruits at medium\/high temperatures for a longer time, their sugars start to oxidize (turning brown). This is called <em>caramelization<\/em> and adds a whole other mouthwatering dimension of flavours.<\/p>\n\n\n\n<p>Here&#8217;s some simple tips:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>No need to add oil, try it &#8211; otherwise I suggest using olive oil<\/li>\n\n\n\n<li>The thinner the cubes or stripes, the more thorough they will caramelize<\/li>\n\n\n\n<li>Thin or less dense veggies (e.g. broccoli) take less time &#8211; roast them on separate tray or add them later<\/li>\n\n\n\n<li>Marinate those veggies before putting into the oven (salt, herbs and spices, &#8230;)<\/li>\n\n\n\n<li>Try roasting seasoned beans and legumes (e.g. chickpeas) or nuts and seeds &#8211; beautiful topping<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-1024x768.jpg\" alt=\"\" class=\"wp-image-551\" srcset=\"https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-1024x768.jpg 1024w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-300x225.jpg 300w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-768x576.jpg 768w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-1536x1152.jpg 1536w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-2048x1536.jpg 2048w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-750x563.jpg 750w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/ekesto-oven-vegetable-oil-free-500x375.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\">roasted oven vegetables (oil-free)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"easy-protein\">Easy proteins<\/h2>\n\n\n\n<p>Dried legumes or beans are a must have in a plant-exclusive kitchen. Beside the fact that they are filling, tasty and fairly cheap, they are also a great source of protein, iron and fibre.<\/p>\n\n\n\n<p>Here&#8217;s some simple tips:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Soaking any type of bean or legume (including lentils!) overnight will start the germination process (initial step of sprouting). That is supposed to make them easier to digest and absorb their nutrients.<\/li>\n\n\n\n<li>Sprout &#8218;em! Play with it and don&#8217;t be afraid to end up with something that might not blow your mind at first! <\/p>\n\n\n\n<p>Besides fresh veggies, you want to always have basic sauce ingredients at hand. This allows you to go any direction, any time. Each of them should be easy to get in a nearby shop:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Tomato Sauce<\/strong><br>Works great with Mediterranean herbs (rosemary, thyme, oregano,\u2026), but also with any curry powder\/paste.<br><em>Tip: Try to get one in a glass bottle.<\/em><\/li>\n\n\n\n<li><strong>Soy Sauce<\/strong> <br>This stir-fry foundation is so rich in flavour that there&#8217;s no need to add anything else. Be gentle as they can be very salty!<br><em>Tip: I prefer Tamari, which is a gluten-free soy sauce.<\/em><\/li>\n\n\n\n<li><strong>Coconut Cream<\/strong><br>This can result in a curry (using powder or a paste), but doesn&#8217;t have to! Some Asian dishes only use coconut milk and veggies.<\/li>\n\n\n\n<li><strong>Peanut butter<\/strong><br>Unless you&#8217;re allergic, this nut butter is incredible with e.g. noodles!<\/li>\n\n\n\n<li><strong>Vegetable Stock<\/strong><br>A very easy one that adds a rich flavour combination and some nutrients to your dish. <br><em>Tip: Look out for a product that is MSG-free (flavour enhancer) and ideally is oil-free (especially palm oil), too.<\/em><\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"678\" src=\"https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-1024x678.jpg\" alt=\"\" class=\"wp-image-579\" srcset=\"https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-1024x678.jpg 1024w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-300x199.jpg 300w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-768x508.jpg 768w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-1536x1017.jpg 1536w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-2048x1355.jpg 2048w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-800x530.jpg 800w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-750x496.jpg 750w, https:\/\/ekesto.com\/wp-content\/uploads\/2021\/01\/charles-deluvio-PqsImnjuElM-unsplash-75x50.jpg 75w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\">Photo by <a href=\"https:\/\/unsplash.com\/@charlesdeluvio?utm_source=unsplash&amp;utm_medium=referral&amp;utm_content=creditCopyText\">Charles Deluvio<\/a> on <a href=\"https:\/\/unsplash.com\/s\/photos\/curry?utm_source=unsplash&amp;utm_medium=referral&amp;utm_content=creditCopyText\">Unsplash<\/a><\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Simplified general cooking guide<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Caramelize onions with very little olive oil (or without oil), until they are brown<\/li>\n\n\n\n<li>For an extra foundation add chopped garlic, grated ginger and\/or some chilli<\/li>\n\n\n\n<li>Add salt and pepper (&#8222;dash by dash&#8220;)<\/li>\n\n\n\n<li>Add the herbs and spices that call your name today<\/li>\n\n\n\n<li>Add veggies that require longer cooking time (e.g. potatoes, aubergine). <br><em>Tips: Keep in mind that the bigger the pieces, the longer they take to cook.<\/em> <\/li>\n\n\n\n<li>Add in already <a href=\"#easy-protein\">cooked legumes or beans<\/a><\/li>\n\n\n\n<li>Add <a href=\"#oven-veggies\">oven roasted veggies<\/a><\/li>\n\n\n\n<li>Add <a href=\"#sauce\">sauce<\/a> of your liking<\/li>\n\n\n\n<li>Time to taste and <a href=\"https:\/\/ekesto.com\/vegan-recipes\/the-3-magic-s-and-friends\/\">balance the 3 &#8222;S&#8220; and friends<\/a><\/li>\n\n\n\n<li>In case it&#8217;s more sauce-y,  put a lid on and let it simmer on lowest heat (or turn off heat) for as long as you like. It is estimated that a shocking third (!) of food waste is created in people&#8217;s households. <\/p>\n\n\n\n<p>The most obvious option is to store leftovers in glass containers.
