Exactly the inspiration I needed. So I started to play with the parameters while more or less still sticking to the ratio of wet and dry ingredients, completely ignoring the filling\/topping part \ud83d\ude42<\/p>\n\n\n\n<p>Compared to the original I swopped the type of flour and reduced sugar and oil content, which definitely shifts the experience a little closer to bread than cake, but hey, people (including myself) still enjoy them \ud83d\ude42<\/p>\n\n\n\n<p>But <em>you<\/em> are in charge here! At this stage it will just taste like sweet bread. Read on for some <a href=\"#flavour-inspiration\">flavour inspirations<\/a>.<\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Dry ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>250g white spelt flour (Type 630)<\/li><li>50g sugar of choice<ul><li><em>I experimented with 25g only, which was a subtle sweetness that I enjoy, but definitely tastes more bread-like. So if you&#8217;re aiming at satisfying people with a sweet-tooth I suggest to go for 50+.<\/em><\/li><\/ul><\/li><li>1 tsp baking powder (2g)<\/li><li>1 tsp baking soda (4g)<\/li><li>Pinch of salt<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Wet ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>200ml water<\/li><li>25ml olive oil (~20g)<\/li><li>3 tsp lemon juice (~10g)<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"sponge-cake-directions\">Directions<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 200 degrees Celsius<\/li><li>Mix dry ingredients<\/li><li>Mix wet ingredients<\/li><li>Gently fold wet into dry ingredients until well combined (don&#8217;t stir, otherwise the cake might end up dense)<\/li><li>Pour mix into baking pan (lined with parchment paper)<\/li><li>This is the moment for an optional topping! If no adjustments of base ingredients are mentioned, they stay the same. <\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Lemon Sponge Cake<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Put all the wet ingredients into a blender and add:<ul><li>zest of 1 lemon.<\/li><li>juice of 1 lemon (instead of only 3 tsp)<\/li><\/ul><\/li><li>Blend well<\/li><li><a href=\"#sponge-cake-directions\">Continue with step 4<\/a><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Banana Sponge Cake<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Wet ingredients:<ul><li>Reduce amount of water to 150ml<\/li><li>Add 2 ripe bananas (~200g)<\/li><li>Mix in a blender, then gently fold into dry ingredients. <\/li><\/ul><\/li><li>After dry and wet have been combined, add 2 good handful raisins (~70g) into the mix.<\/li><li><a href=\"#sponge-cake-directions\">Continue with step 5<\/a><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Chai Sponge Cake<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Additional dry ingredients<ul><li>1 tsp cinnamon<\/li><li>0.25 tsp clove powder<\/li><li>0.25 tsp cardamom powder<\/li><li>0.5 tsp turmeric powder<\/li><li>Pinch of black pepper<\/li><\/ul><\/li><li>Additional wet ingredients<ul><li>12g fresh ginger<\/li><li>0.5 tsp fennel seeds<\/li><li>Mix in a blender, then gently fold into dry ingredients.<\/li><\/ul><\/li><li>After dry and wet have been combined, add 2 good handful raisins (~70g) into the mix.<\/li><li><a href=\"#sponge-cake-directions\">Continue with step 5<\/a><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Apple-Cinnamon Sponge Cake<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Dry ingredients<ul><li>30g sugar of choice<\/li><li>2 tsp cinnamon<\/li><\/ul><\/li><li>Wet ingredients<ul><li>Instead of water, use 200ml unfiltered apple juice (no sugar added)<\/li><li>~250g grated apples<\/li><\/ul><\/li><li><a href=\"#sponge-cake-directions\">Continue with step 4<\/a><\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">That&#8217;s it!<\/h2>\n\n\n\n<p>Hope you found some inspiration in the lines above. <\/p>\n\n\n\n<p>Let&#8217;s bake some fluffy vegan cakes! &#x1f919;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A base recipe to create fluffy vegan cakes.
